Canning and Preserving: Salsa, Chili and Tomato Sauce - YUM!!

A tradition even before we got SevenMaples was Ray’s annual production of Salsa and Chili Sauce, which if I do say so myself, is the best! The summer of 2022 marked our first year with an extensive range of tomatoes planted including at least 12 varieties of heirloom, beefsteak, Roma and Cherry.
The first wave ripened near the end of August and this continued over the next 2 - 3 weeks. This marked the beginning of the canning season with lots of chopping of tomatoes, onion and peppers and days of rich aromas wafting from the kitchen as the “secret recipes” were followed to the letter.
It’s another fun activity to engage in with friends and the resulting jars of Chili, Salsa and Tomato sauce have kept us going through the winter right into the Spring.
